PEANUT BRITTLE 
2 c. sugar
1/2 c. water
1/4 tsp. cream of tartar
2 tbsp. molasses
2 tbsp. butter
1/4 tsp. salt (optional)
1 1/2 tsp. baking soda
2 c. peanuts

Mix together sugar, water and cream of tartar. Cook without stirring until 280 degrees (soft crack). Add molasses, butter and salt. Stir constantly until 300 degrees (hard crack). Quickly shut off heat and add baking soda and peanuts. Quickly pour out onto tin foil. Spread until it starts to set. Cool. Break into pieces.
