LOW CALORIE CHEESE CAKE 
2 envelopes unflavored gelatin
3/4 c. sugar
1/4 tsp. salt
3 eggs, separated
1 1/2 c. skim milk
1 tsp. lemon rind, grated
3 c. cottage cheese
3 tbsp. lemon juice
1 tsp. vanilla
1/3 c. graham cracker crumbs

Mix gelatin, 6 tablespoons sugar and salt in double boiler over boiling water. Beat egg yolks and milk and add to gelatin mixture. Cook, stirring constantly until mixture thickens slightly (about 6 minutes). Remove from heat, add lemon rind. Chill until mixture mounds slightly when dropped from a spoon. While chilling, beat cottage cheese at high speed 3 minutes. Add lemon juice and vanilla. Fold in chilled gelatin mixture. Beat egg whites until stiff but not dry. Add remaining sugar and beat until very stiff. Fold into gelatin mixture. Turn into pan, sprinkle with graham cracker crumbs. Chill until firm.
