ARTICHOKE NIBBLES | |
2 (6 oz.) jars marinated artichoke hearts 1 sm. onion, chopped 4 eggs, beaten 1/4 tsp. salt 1/8 tsp. oregano 2 c. cheddar cheese, shredded 1 clove garlic, minced 1/4 c. fine bread crumbs 1/8 tsp. pepper 1/8 tsp. hot pepper 2 tbsp. parsley, minced Preheat oven to 325 degrees. Drain marinade from 1 jar hearts into medium skillet. Drain 2nd jar and discard marinade. Chop artichokes and set aside. Heat oil, add onions, garlic and saute until limp. combine eggs, bread crumbs, salt, pepper, oregano and hot pepper. Fold in cheese and parsley. Add artichoke hearts and sauteed onion mixture. Pour into 9 inch square baking pan. Bake 30 minutes. Allow to cool briefly before cutting into 1 inch squares. |
