2 c. oatmeal
2 1/2 c. water
3 c. brown sugar
1 c. oil
2 eggs
2 2/3 c. flour (I use half brown flour)
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla

Topping:

1 1/2 c. brown sugar
1 c. coconut
1 c. nuts
6 tbsp. melted butter
1/4 c. cream

Mix first 2 ingredients and let set. Mix all together and bake at 350°F. Then put on topping and brown lightly in oven or under broiler, which is faster.
