1 chicken, boiled in salted water and deboned
1 can Ro-Tel tomatoes with chilies
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 lb. Velveeta cheese or grated Cheddar
1 onion, chopped
1 lg. pkg. Doritos

Boil chicken in salted water. Bone and place in bottom of baking dish (13 x 9); chop onion over chicken. Slice the cheese thin and place over onion; sprinkle 1/2 package crushed Doritos over cheese. Pour soup over all (no water); pour tomatoes over top, then the rest of crushed Doritos. Bake 45 minutes at 350 degrees.

You can also add chopped bell pepper and garlic, if desired. Saute onions, pepper, and garlic in butter before adding.
