WATERMELON RIND PICKLE 
2 qts. watermelon rind
1 tbsp. baking soda
2 tbsp. alum
Salt

SYRUP:

1 qt. vinegar
4 lbs. sugar
1 pt. water
1/3 box whole cloves
Cinnamon sticks

Cover rind with water mixed with soda. Soak overnight. Pour off water and drain. Cover rind with water mixed with alum. Boil for 10 minutes. Pour off water and drain. Cover with fresh water mixed with a little salt. Cover and boil 35 to 40 minutes; drain. In a saucepan combine ingredients for syrup and heat until hot but not boiling. Add rind and cook until transparent. Seal jars. Serve chilled.
