FRIED OKRA | |
2 lbs. okra 1 egg, beaten 3/4 c. cornmeal (part oat bran can be used) Fat Wash okra, cut off stems and cut into 1/4" slices. Dip into egg, roll in cornmeal and fry in hot deep fat, 365 degrees, until browned. Drain on absorbent paper. For frozen okra, partially thaw okra; dip in beaten egg, roll in cornmeal and fry in hot fat. Drain on absorbent paper. 6 to 8 servings. |
