ZUCCHINI AND EGGPLANT SPECIAL 
3 med. zucchini
1 lg. eggplant
5 med. onions
4 lg. ripe tomatoes
1 lb. ground sausage

Saute sausage and onions. Chop zucchini and eggplant; quarter tomatoes. Soak eggplant for 30 minutes in table salt and add water then drain. Add all vegetables to sausage and onion mixture. Season to taste. Cook 30 minutes over low heat.
