BREAD PUDDING 
6 c. rolls or bread slices, when quartered
8 eggs, separated
1 1/2 pts. cream
1/2 c. sugar, plus 2 tbsp. of meringue
Juice of 1/2 orange
Rind of 1/2 orange

Quarter the rolls or bread slices until you have enough to fill an 8 x 11 inch baking dish completely. Beat egg yolks, add cream, 1/2 cup sugar, mix thoroughly. Pour mixture over bread, combine orange juice and rind. Pour over mixture. Bake in preheated 300 degree oven for 1 hour. Beat egg whites until stiff, then slowly add 2 tablespoons of sugar. When bread pudding is done, spread top with egg whites. Bake in preheated oven, 275 degrees for about 20 minutes. If desired, sprinkle top with nut meats. Serves 10 to 12 people.
