1 box butter cake mix
1 sm. box instant vanilla pudding
4 eggs
1/2 c. vegetable oil
1 c. water
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 c. mint chocolate chips
1 c. chopped pecans
1 (6 oz.) pkg. frozen coconut

Mix first 7 ingredients together and beat on medium speed until well blended. Mix the remaining 3 ingredients with 2-3 tablespoons flour and fold into the cake mixture. Pour into a greased and floured tube pan and bake 1 hour at 300-325 degrees.
