FROSTED SALAD 
2 pkgs. lemon gelatin
2 c. boiling water
2 c. cold water
13 oz. can crushed pineapple, drained (save juice for topping)
1 (11 oz.) can mandarin oranges, drained
2 c. miniature marshmallows

TOPPING:

1/2 c. sugar
2 tbsp. flour
1 c. pineapple juice
2 eggs, beaten
2 tbsp. butter
1 c. whipping cream
1/4 c. shredded cheese

Dissolve gelatin in boiling water. Add cold water. Cool until it starts to gel. Add drained pineapple, drained oranges and marshmallows. Pour into a 7x12-inch pan. Cool until set.

For the topping, combine sugar and flour. Add pineapple juice and eggs. cook until thick, stirring constantly. Add butter. Cool. Add whipped cream; spread on gelatin fruit mixture. Sprinkle cheese on top. Cut into squares for serving.
