GREEK CHEESE PIE 
12 eggs, beaten
1 lb. feta, patted dry
1 lb. ricotta
1 tsp. parsley, minced
1/2 lb. butter, melted & cooled
1/2 lb. filo dough
1 1/2 cubes butter, melted for brushing

Mix eggs together until thick and smooth. In another bowl, mix the cheeses, parsley and butter together. Add in the eggs and stir well. Line a deep 13 x 9 inch pan with filo dough, which has been painted with butter between the layers. Use 10 sheets of filo. Pour cheese mixture in and top with other 10 buttered layers of filo. Do not crimp or cut, but simply allow the dough to lay as it falls. Bake in the oven at 350 degrees for about 30 minutes or until golden. Serves 10. NOTE: This is excellent brunch dish also.
