TOASTED COCONUT PECAN PIE 
3 eggs
1 1/2 c. sugar
1/2 c. butter, melted
2 tsp. lemon juice
1 tsp. vanilla extract
1 (3 1/2 oz.) can flaked coconut
1/2 c. pecans, coarsely chopped
1 pie shell, unbaked

Preheat oven to 350 degrees. Thoroughly combine eggs, sugar, butter, lemon juice, and vanilla. Stir in coconut and pecans. Pour into pie shell. Bake 45 to 50 minutes or until filling is set. Cool. Garnish with whipped cream and pecan halves.
