SWEET POTATO SOUFFLE 
3 med. potatoes, cooked and peeled
1 1/2 stick butter
2 eggs, beat well
3/4 c. sugar
1 tsp. vanilla
1/4 to 1/2 c. orange juice

Cook and peel potatoes, add butter and beat until fluffy. Add eggs and beat well. Then add sugar, vanilla and orange juice to moisten. Pour into buttered dish and bake at 325 degrees for 1 hour.
