CHILI RELLENOS 
1 1/2 lbs. ground beef
1/4 c. chopped onion
2 sm. cans green chilies, seeded
3/4 tsp. salt
1 1/2 c. milk
1/4 c. flour
1/2 tsp. hot sauce
3 eggs, beaten
3/4 lb. American cheese, shredded

Cook ground beef until light in color; drain off fat. Add onion, salt and pepper, return to fire. Cook 10 minutes (slow). Place half of chilies which have been cut in half in baking dish. Sprinkle cheese on this and add ground beef on top. Put remaining chilies on meat.

Combine all other ingredients and beat until smooth. Pour over meat mixture. Bake at 350 degrees until inserted knife comes out clean, about 35 or 40 minutes.
