KAHLUA MOCHA CHEESECAKE 
3 c. chocolate cookie crumbs
1/2 c. sugar
1 stick butter, melted

FILLING:

2 lbs. cream cheese
1 1/2 c. sugar
1/4 c. Kahlua
2 tbsp. instant espresso powder
7 eggs
1 c. chocolate chips, melted
Whipped cream (optional)

Combine crust ingredients and press into bottom and up sides of a 10 inch buttered spring-form pan. Combine filling ingredients in a food processor and blend until smooth (may be combined in a bowl and mixed with a mixer). Pour filling into crust and bake at 325 degrees for 1 hour 15 minutes or until center is set. When cool, decorate with whipped cream, if desired.
