KEYLIME PIE 
1 tbsp. unflavored gelatin
1 c. sugar
1/4 tsp. salt
4 eggs, separated
1/2 c. lime juice
1/4 c. water
1 tsp. grated lime peel
1 or 2 drops green food color
1 c. whipping cream (whipped)
1 baked pie crust OR
1 graham cracker crust

Mix gelatin, 1/2 cup sugar and salt in saucepan. Beat egg yolks, lime juice and water together. Stir into gelatin mixture. Cook over medium heat, stirring constantly, until mixture comes to boil. Remove from heat. Stir in grated peel. Add green coloring.

Chill mixture, stirring occasionally. When mixture begins to thicken and is chilled, beat egg whites until soft peaks form. Add remaining sugar to whites and continue beating until stiff peaks form.

Fold gelatin mixture into egg whites. Fold in whipped cream. Add to pie crust. Chill until firm. Top with whipped cream. Decorate approximately 1/2 to 1 inch around edge with grated lime peel. Chill.
