BANANA NUT CAKE | |
2 1/4 c. flour 1 1/4 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 c. shortening 2 eggs 3 med. sized mashed very ripe bananas 1/2 c. buttermilk (sour milk) 1 tsp. vanilla 1/2 c. nuts, chopped Combine flour, sugar, baking powder, soda and salt. Add shortening, eggs and bananas. Mix with spoon until all ingredients are well blended. Blend in milk, vanilla and nuts. Pour into greased and floured pans (2 - 8 inch layer or 13 x 9 inch pan) 25 to 30 minutes layer or 35 to 40 minutes for oblong. Cake is done when it springs back when lightly touched in center. |
