MONT D'OR POTATOES 
2 lb. mashed potatoes
3/4 c. milk (hot)
Salt & pepper to taste
4-6 tbsp. butter
3 eggs, separated

Beat the mashed potatoes with the butter and hot milk. Add salt and pepper to taste. May add desired herbs at this time. Add 3 egg yolks and mix well. Set aside.

Beat 3 egg whites until they form firm, but not dry, peaks. Fold into potato mixture. Spoon the mixture into a buttered baking dish. Sprinkle with grated cheese and dot with butter. Bake in preheated 400 degree oven for 15-20 minutes.
