SHRIMP GUMBO SALAD 
1 c. uncooked rice
1 tsp. sugar
1/2 tsp. grated lime rind
2 tbsp. lime juice
1 1/2 c. diced cooked ham
1 c. sliced celery
1/2 c. diced green pepper, fresh
12 oz. raw shrimp, may be frozen and thawed
6 tbsp. thin French dressing
1/2 c. mayonnaise
1 c. halved cherry tomatoes
1 pkg. frozen okra, if desired

Cook rice. Place in large bowl; stir in sugar, lime rind and juice, then ham, celery and green pepper. Cook shrimp and, if desired, okra separately. Save a few whole shrimp for garnish. Dice shrimp and add with okra to rice-ham mixture. Drizzle with French dressing; toss to mix. Chill 30 minutes.

Just before serving, stir in mayonnaise and tomatoes. Garnish. Serves 8-10.
