OPEN PEACH PIE 
Mix 1 cup sugar with 2 tablespoons cornstarch. Cover inside of pie plate with 3/4 mixture; arrange peeled halves of peaches insides up until pan is full. Sprinkle remaining cornstarch mixture on top of peaches.

Carefully pour 1/2 pint of cream around peaches and some in peach center. Put in moderate oven until pastry is set. Reduce heat and bake slowly until peaches are tender and custard is clear and firm.
