OLD-TIME RICE PUDDING 
3/4 c. uncooked rice
1 1/2 qt. milk
3/4 c. sugar
1/4 tsp. nutmeg
1/2 tsp. salt
3/4 c. seedless raisins

Preheat oven to 325°F. Wash rice. Add milk, sugar, nutmeg, and salt. Place in a buttered 2 1/2 quart baking dish.

Bake in slow oven for 2 1/2 hours, stirring twice during the first hour. Stir brown crust into pudding several times during the remainder of baking. Add raisins 1/2 hour before pudding is done. Then allow crust to form again on pudding. Serve warm or cold with cream, if desired.

Serves 6 to 8.
