RICE LASAGNA | |
3 c. cooked rice 2 eggs, slightly beaten 1/2 c. plus 2 tbsp. Parmesan cheese 2 c. shredded Mozzarella 1/2 c. cottage cheese 1 lb. lean ground beef 1 lg. jar chunky spaghetti sauce To the cooked rice, add eggs and Parmesan. Mix thoroughly and set aside. Combine cheeses, except for 2 tablespoons Parmesan. Mix well. Brown meat and add spaghetti sauce and cook until thoroughly heated. Spoon half of rice mixture into 8x8 inch baking dish. Cover with half of meat sauce. Repeat layers. Top with 2 tablespoons Parmesan. Bake at 375 degrees for 20 minutes or until thoroughly heated. |
