MICROWAVED STUFFED PEPPERS 
6 medium green peppers
1 1/2 lb. ground beef (cooked)
1 c. cooked long grain rice
1 sm. onion, chopped
1 1/2 tsp. salt
1/4 tsp. pepper
1 clove minced garlic
1 can tomato soup
1/2 c. water

Cut off tops of peppers, remove seeds and membrane. Mix beef with rice, onion, salt, pepper and garlic. Fill pepper with mixture. Arrange in a microwave casserole dish. Mix soup with water. Pour over and around peppers. Cover tightly in plastic wrap. Microwave on high (175 degrees) for 28 to 32 minutes. Let stand covered for 5 to 10 minutes, then melt cheese over the top. (Cheese is optional.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
