MEXICAN SUGAR COOKIES 
1 lb. butter
1 3/4 c. sugar
2 eggs
1/2 tsp. baking soda
1 tsp. vanilla
Flour

Blend butter, sugar and baking soda together until soft. Beat eggs and add. Add vanilla. Gradually add flour until right consistency. Roll out on floured board. Cut out with a glass. Sprinkle tops with cinnamon sugar if desired. Bake at 350 degrees for 6 to 8 minutes. Makes 6 to 8 dozen.
