AGGIE FABRIZIO'S SPECIAL CARROT
CAKE
 
4 eggs
2 c. sugar
1 1/2 c. oil
1 tsp. vanilla
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. shredded carrots
1 tbsp. grated orange rind
1 c. chopped nuts
1 c. golden raisins
1 sm. can crushed pineapple, undrained

FROSTING:

2 c. confectioners' sugar
1 (8 oz.) pkg. light cream cheese, softened
4 tbsp. butter, softened
2 tsp. vanilla

Blend and beat well eggs, sugar, oil and vanilla. Mix the dry ingredients and blend into the egg-sugar mixture. Mix together the carrots, orange rind, nuts, raisins and pineapple. Add to batter. Bake in a greased 13 x 9 inch pan at 350 degrees for 35 to 45 minutes.

To make frosting: Sift sugar into bowl of mixer. Add remaining ingredients. Beat until smooth and creamy. Spread on cooled cake.
