TABULI 
1 c. cracked wheat
1 bunch parsley
2 bunches green onions
1 bunch fresh peppermint or 1/2 c. dry (optional)
5 sm. or 3 lg. tomatoes
1 cucumber (optional)
2 lemons
2 tbsp. oil
Salt, pepper & allspice to taste

First rinse the cracked wheat in cold water and put aside. Next dice up the parsley, green onions, peppermint, tomatoes and cucumber. Mix. Next add juice of 2 lemons and oil. Salt, pepper and allspice to taste. Add to cracked wheat; mix well.

This may be done the day before you serve.
