SHRIMP SCAMPI 
1/4 lb. salted butter
2 gloves garlic, minced
1 scallion, minced including greens
1/2 tsp. diced dill weed
1 tsp. oregano
1 1/2 tsp. chopped parsley
1/4 tsp. salt
1/4 tsp. pepper
1 (6 oz.) tomato sauce
1/2 c. sherry

Peel, devein, butterfly shrimp and place in casserole. Melt butter over low heat adding all but tomato sauce and sherry. Pour over shrimp. Cook 15 minutes in 350 degrees oven. Simmer tomato sauce and sherry 15 minutes on stove top.

Spoon tomato mixture on top of shrimp and run under broiler for a few minutes.
