POP-OVER PIZZA
1 lb. ground chuck
1 lg. onion, chopped (1 c.)
1 (1 1/2 oz.) envelope spaghetti sauce mix
1 (15 oz.) can tomato sauce
1/2 c. water
1 (8 oz.) pkg. sliced Mozzarella cheese
2 eggs
1 c. milk
1 tbsp. vegetable oil
1 c. sifted all-purpose flour
1/2 tsp. salt
1/2 c. grated Parmesan cheese

Preheat oven to 400 degrees. Grease a 9x13x2 inch baking pan. Brown beef with onion in a large skillet, breaking it up with a spoon as it cooks. Spoon off excess fat from skillet. Stir in sauce mix, tomato sauce and water; simmer 10 minutes. Spoon into prepared pan; top with slices of cheese. Place in oven to keep hot.

Beat eggs, milk and oil in a small bowl with electric mixer, until foamy. Beat in flour and salt until batter is smooth. Pour batter over hot meat filling, spreading to cover completely. Sprinkle with cheese. Bake in a hot 400 degree oven for 30 minutes or until puffed and deep golden brown. Cut into squares; serve while hot and puffy. 8 servings.
