OATMEAL - RAISIN COOKIES 
1/2 c. butter
1/2 c. vegetable shortening
1 c. packed brown sugar
3/4 c. granulated sugar
2 eggs
2 tsp. vanilla
1 3/4 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. oatmeal
1 1/2 c. coconut, if desired

Beat shortenings, sugars, eggs, and vanilla until light and fluffy. Gradually beat in flour, salt, soda, and powder. Stir in oats, raisins, and coconut. Drop 3 inches apart on ungreased sheets. Bake 13 to 15 minutes at 350 degrees. Remove and cool on racks. Yield: 38 three inch cookies.
