OATMEAL CAKE 
1 c. quick oats
1 1/2 c. boiling water
1/2 c. butter
1 c. brown sugar
2 eggs
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Let oats and 1 1/2 cups boiling water stand for 20 minutes. Cream butter, sugars and eggs; add to oatmeal. Add next 4 ingredients and beat. Put in cake pan and bake at 350 degrees, approximately 30 to 35 minutes.

FROSTING:

1 stick butter, melted
1/2 c. skim evaporated milk
1 tsp. vanilla
1 1/4 c. brown sugar
1 (7 oz.) box angel flake coconut

Stir together, put on warm cake and broil for 1-2 minutes. 24 servings.
