THE LUCY'S POTATO CAKE WITH
ICING
 
1 c. butter
2 c. sugar
4 eggs
2 c. mashed Irish potatoes
2 c. raisins
1 c. nuts
1 c. sour milk
2 c. sifted flour sifted with:
1 tsp. baking soda
2/3 c. cocoa
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. cloves
1 tsp. salt

Cream butter and sugar; add slightly beaten eggs; add potatoes, raisins and nuts. Slowly add dry ingredients alternately with sour milk.

Grease and flour three 9 inch cake pans. Bake in 350 degree oven about 35 minutes or until done.

CHOCOLATE ICING:

Combine 2 cups sugar, 1 small can evaporated milk and 2 teaspoons Karo. Cook for 2 1/2 minutes. Remove from heat and stir in 3/4 pound chocolate chips and 1 stick butter. Beat until ready to spread. This icing is good on chocolate cakes as well.
