FRIED ONION RINGS 
1 1/2 c. all-purpose flour
1 1/2 c. beer (active or flat)
3 very lg. yellow onions
3 to 4 c. shortening

Batter: Combine flour and beer in a large bowl and blend thoroughly, using a whisk. Cover the batter and allow to set at room temperature no less than 3 hours. Cut onions into 1/4 inch thick slices. Separate the slices into rings and set aside. Fry at 375 degrees until golden brown; drain on paper towels or brown grocery bags.

To Freeze: Fry rings and drain until room temperature. Arrange in single layer and freeze. When frozen, pack in plastic bags and return to freezer.

To Reheat: Arrange on jelly roll pan and place in a preheated 400 degree oven for 4 to 6 minutes.
