FRIED ONION RINGS 
1 1/2 c. beer or milk
1 1/2 c. pancake mix
3 lg. yellow onions
3-4 c. shortening

Whisk flour and liquid together in a large bowl. Cover and let batter stand 3-4 hours at room temperature. Peel onions, cut into thick slices. Separate rings and set aside.

Heat shortening to 375 degrees. Dip rings in batter and fry in the hot fat, turning once or twice, until golden. Transfer to a paper lined dish to drain. Keep warm in oven until ready to serve.
