CHOCOLATE DELUXE ZUCCHINI CAKE 
3 c. flour
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
1/4 tsp. cinnamon
4 eggs
3 c. sugar
1 1/2 c. oil
3 sq. (3 oz.) unsweetened chocolate, melted and cooled
1 1/2 tsp. vanilla
1/2 tsp. almond extract
3 c. coarsely grated zucchini
1 c. chopped nuts
1/2 c. chopped dates or raisins

Sift together flour, baking powder, baking soda, salt and cinnamon. Set aside.

Beat eggs until frothy - gradually beat in sugar and oil. Add chocolate, vanilla and almond extract. Fold in dry ingredients.

Squeeze excess moisture from zucchini. Fold zucchini, nuts and dates or raisins into batter. Pour into a greased and floured tube pan. Bake in 350 degree oven for 1 hour and 15 minutes. Serve with whipped topping or frost with Chocolate Frosting.
