QUICK ZUCCHINI CAKE | |
1 box yellow cake mix 4 eggs 1/2 c. vegetable oil 1 tsp. cinnamon 2 c. unpeeled and grated zucchini 1/2 c. raisins 1/2 c. chopped nuts 1 tbsp. vanilla Confectioners' sugar (optional) 1. Beat cake mix, eggs, oil, cinnamon and vanilla together in large bowl for 6- 7 minutes. 2. Fold in zucchini, raisins and nuts. 3. Grease and flour a 10 inch tube pan or bundt pan. Spoon in batter. 4. Bake at 350 degrees for 40-50 minutes. Test with toothpick at 40 minutes for doneness. Retest at 5 minute intervals. 5. Remove cake from pan and cool on wire rack. 6. Sprinkle with confectioners' sugar, if desired. 7. Yield: 16-20 servings. |
