SUMMER VEGETABLE CASSEROLE 
1 bunch fresh broccoli
1 head fresh cauliflower
1 lb. fresh carrots
1 lb. pkg. Velveeta cheese
1/4 c. milk
Salt to taste

Wash and cut up broccoli and cauliflower. Peel and slice carrots. Place in large saucepan with a small amount of water. Can use vegetable steamer. Add salt. Cook only until vegetable are tender. Do not overcook. Drain. Layer in casserole dish with cheese. Top with cheese and pour milk over all. Place in oven or microwave just until cheese melts. Stir gently, being careful not to tear vegetables. Serve hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
