EGGPLANT PATTIES 
1 med. eggplant
1 egg
1 tbsp. flour
1/2 tsp. sugar
Salt to taste
2 heaping tbsp. Crisco

Peel and cook eggplant in salt water until tender. Drain and mash. Add egg, flour, sugar, and mix well. Drop by spoonfuls and fry in hot Crisco until brown on each side about 2 1/2 minutes per side on medium heat. Patties should be thin.
