SCANDINAVIAN MEATBALLS 
3 lb. lean ground beef, pork or veal or 1 lb. of each
1 1/2 c. fine dry bread crumbs
3 eggs, beaten
2 c. milk
1/2 c. dry minced onion
3 tbsp. salt
1/2 tsp. sugar
1/2 tsp. pepper
Oil for browning
2 c. water
3 cans cream of mushroom soup

Mix meat, crumbs, eggs, milk, onion, salt, pepper and sugar in large bowl. This will be soft mixture. Shape into balls the size of an egg by hand or using 2 spoons and fry on low heat in fry pan until brown. Watch carefully. Fry batches until all are fried and you may have to wash fry pan after each batch.

Place meatballs in casserole of desired size. Drain fry pan, add soup and water and heat to simmering. Pour over meat and bake covered in 350 degree oven for 30 minutes. Serve over noodles, rice or mashed potato. Leftovers freeze well.
