SWEET AND SOUR CHICKEN 
2 (16 oz.) jars Russian dressing
1 (12 oz.) jar apricot preserves
1 onion, sliced
2 chickens, skinned and cut into pieces

Blend dressing and preserves together. Place chicken pieces in large casserole dish or kettle. Pour sauce over chicken and add onion. Bake at 350 degrees for 1 to 1 1/2 hours. Sauce may be thickened with cornstarch. Best served with noodles, but can be served with rice or potatoes.
