SOUTHERN COCONUT CAKE | |
1 3/4 c. sifted Robin Hood flour 2 1/2 tsp. baking powder 1 c. sugar 1/2 tsp. salt 2/3 c. shortening (Crisco) 2/3 c. milk 1 tsp. almond flavoring 3 eggs 1 c. shredded coconut Sift dry ingredients together in bowl. Add shortening, milk and flavoring. Beat 2 minutes at low speed, add unbeaten eggs and beat 2 minutes longer. Stir in coconut. Bake in 8 x 8 inch square pan at 375 degrees for 45 minutes. (I bake mine in 8 x 10 inch pan.) Cool 5 minutes before removing from pan. Ice with Orange Butter Frosting. FROSTING: 2 tbsp. butter 3 tbsp. orange juice 2 c. powdered sugar 1/2 tsp. lemon extract Mix together until creamy and smooth. Frost cake. |
