PECAN PIE BARS
1 1/4 c. all-purpose flour
3 tbsp. brown sugar
1/2 c. butter
2 eggs
1/2 c. packed brown sugar
1/2 c. chopped pecans
1/2 c. light corn syrup
2 tbsp. butter, melted
1 tsp. vanilla

For crust, in a bowl stir together flour and 3 tablespoons brown sugar. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Pat mixture into an ungreased 11 x 7 x 1 1/2 inch baking pan. Bake in a 375 degree oven for 20 minutes.

Meanwhile, for pecan layer, in another mixing bowl use a fork to beat eggs. Stir in 1/2 cup brown sugar, pecans, corn syrup, melted butter, and vanilla.

Pour pecan mixture on top of crust, spreading evenly. Bake in the 375 degree oven for 15 to 20 minutes more or until center appears set. Slightly cool in pan on a wire rack, then cut into bars. Cool completely. Store bars, covered, in the refrigerator. Makes 24.
