CHICKEN ENCHILADA CASSEROLE 
1 med. onion, chopped
3 tbsp. butter
1 can cream of chicken soup
1 c. chicken broth
2 c. cooked chicken
1 c. bell pepper
1 pkg. corn tortillas
1 lb. grated Cheddar cheese

Cook onion in butter. Add soup and chicken broth.

Grease 2 or 3 quart casserole. Tear tortillas into bite size. Put 1 layer of tortillas in casserole. Add 1 layer of chicken, add sauce to which bell pepper has been added. Then put a layer of cheese. You should make 2 layers of the tortilla, chicken, sauce and cheese. Bake at 350 degrees for 30 minutes.
