EASY ONION RINGS 
1 lg. Spanish onion
1 c. all purpose flour
1 tsp. baking powder
1 tsp. salt
2 eggs
1/2 c. milk
1 tsp. vegetable oil
Vegetable oil

Peel onion; cut into 1/4 inch slices and separate into rings. Combine dry ingredients; stir well. Add eggs, milk and 1 teaspoon oil; beat until smooth. Dip onion rings into batter; fry in deep hot oil (375 degrees) until golden brown. Drain on paper towels. Yield: 4 to 6 servings.
