STIR FRY SHRIMPS AND ONION IN
CURRY PASTE
 
10 oz. shrimp (shell removed)
1 onion (shredded)
1 green pepper (shredded)
1 red pepper (shredded)
2 eggs
1 tsp. mashed garlic
1 tsp. curry powder

SEASONING:

1/3 tsp. salt
Pinch of sesame oil
Pinch of pepper
1 tsp. corn flour
1 tbsp. oil

SAUCE:

1 tsp. light soy sauce
1/3 tsp. sugar
1/4 tsp. salt
1/2 tsp. corn flour
2 tbsp. water

Beat egg together with 1/2 tablespoon oil. Stir fry with 2 tablespoons oil. Dish up. Wash shrimp and wipe dry. Marinate with seasoning for 10 minutes. Blanch in boiling water until it is cooked. Drain.

Saute onion with 2 tablespoons oil. Add pepper and garlic. Stir fry for a while. Add curry powder and shrimp. Stir fry for a while. Add in egg and mix well, add sauce. Dish up.
