AUNT DEBBIE'S CANDY APPLE SALAD | |
3 lg. Red Delicious apples 7 lg. Granny Smith apples 1 c. sugar 2 eggs (raw), well beaten 2 tbsp. plus 1/2 tsp. flour 2 tbsp. cider vinegar 2 (20 oz.) cans pineapple tidbits 8 oz. dry roasted peanuts 2 (8 oz.) RichWhip, whipped stiff 1 c. pineapple juice Drain juice from tidbits and reserve juice. Combine sugar, pineapple juice, flour, vinegar, and eggs. Cook carefully over medium heat, stirring frequently until thick. Cool well. Core and cut apples into chunks; sprinkle with Fruit Fresh. Add tidbits, peanuts, whipped RichWhip, and cooled cooked mixture to apples. Mix well and refrigerate until well chilled. |
