CANDIED APPLES - ON - STICKS 
10 to 12 wood skewers
3 c. sugar
2/3 c. water
15 whole cloves
10 to 12 med. apples
1/4 tsp. cream of tartar
1 tsp. lemon juice
1 to 2 tsp. red food coloring

Stick skewers into stem end of apples securely. Combine sugar, cream of tartar, water, lemon juice, and cloves in a heavy saucepan. Stir over heat until sugar dissolves. Add coloring. Boil, without stirring, to 300 degrees. Remove from heat. Skim out cloves. Twist apples in syrup quickly. Place on heavily buttered cookie sheet. Makes 10 to 12 apples on sticks.
