REFRIGERATOR PICKLES 
1 c. sugar
1 c. vinegar
2 tbsp. salt
1/3 tsp. turmeric
1/3 tsp. mustard seed
1 onion, sliced thin
Cucumbers (or young zucchini), sliced thin
1 qt. jar, washed & sterilized

Mix sugar, vinegar, salt and spices to make syrup. Slice onion and washed cucumbers (or zucchini) to fill jar. Stir syrup well and pour over onions and cucumbers. Place lid on jar tightly. Refrigerate for 5 days before using. Keep refrigerated when not being used. Makes 1 quart.

Similar to the sweet/sour refrigerator pickle I grew up with. Use any kind of cucumber at hand (I prefer the English hothouse variety...fewer seeds!) If you have never made simple syrup here's how: pour syrup ingredients into a heavy sauce pan and bring to a simmer. Allow to thicken to the consistency of pancake syrup. Cool slightly and continue as directed. Great as a refreshing side or as a sandwich topper.
