1 c. oil
2 c. sugar
5 eggs
2 c. pumpkin
2 c. flour
2 (3 1/2 oz.) coconut pudding pie filling
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg

Mix ingredients together. Fill 1/2 full cups and bake at 350 degrees for 15-20 minutes. Makes a lot. You can also make regular size cupcakes.
