PINEAPPLE-LIME SHERBET | |
1 (6 oz.) can frozen pineapple juice concentrate, thawed 1/3 c. sugar 1 tsp. grated lime peel 1/2 c. lime juice 2 c. buttermilk In a medium size saucepan put pineapple juice and sugar, heat over medium heat until sugar dissolves. Remove from heat, let cool, add lime juice, lime peel, and buttermilk. Mix well. Pour into 2 divided ice cube trays, freeze for 1 1/2 to 2 hours or until almost firm. Put cubes in food processor fitted with a metal blade or the large bowl of an electric mixer. Beat until smooth and slushy. Put in 1 quart bowl with lid. Cover and freezer until firm about 3 hours or for up to 2 weeks. Let stand at room temperature 5 minutes. Yield: 8 servings (1/2 cup per serving) - 93 calories - 1 fat. |
